Today I cook following Nonnì’s teachings, with local zero-mile ingredients, simple gestures and respect for the flavours of the past. That’s how even a humble dish becomes special.
Tradition stays alive when we share it.
That’s why I bring my family’s authentic recipes to your home or to the place where you’re staying, wherever you are.
Flavour starts with choice.
Before every preparation I travel many kilometres to meet the producers of my area. I choose them personally for the quality of their products and the care they put into their work.
My cooking is also born from meeting the people who add value to Puglia every day. I love building relationships, working with them and introducing the local businesses that keep the knowledge of our land alive.
This is also how I pursue a sustainable, genuine cuisine that brings out the flavour of every ingredient without distorting it.
When you taste one of my dishes, I’d like you to taste my land too.
